Mushrooms are good for you. This recipe, maybe not so much. But, if you have earned a treat, this goes great with steak and white rice –another not so great option–but…well, it’s supposed to be a treat.
Start with chopped onions. Cook them in the butter until they are translucent.
Add sliced mushrooms.
Cook the mushroom/onion mixture until they are tender and starting to brown.
Add the milk and sour cream, and stir until combined. One at a time.
Mix in the Cotija cheese.
Once the cheese is mixed througholy you can add as much chopped heat as you would like. You want to use the chile and adobe sauce of the canned chipotles. You can start with a little chile, and add more if it’s not hot enough.
In the end, you get a delicious side of hot, cheesy, shroom sauce!
Mushroom Sauce
Ingredients
1 onion (yellow or white works)
1-2 tablespoons of butter
2 cups of mushrooms (any variety but I like button for this recipe)
1/4 cup milk
1/2 cup sour cream
1 cup of cotija cheese
1 can of chipotles in adobe sauce
